There are a lot of different species of fish in the sea that you can cook and eat My favourite is cod It's finally time for Tobbe and I to do a food fight on cod we've done a few food fights before mostly on perch or salmon But now we've, travelled 2000km and arrived in the northern part of Norwat with high mountains, cold weather and rain But this is where the best cods swim We've swapped our outdoor kitchen for this professional kitchen we've got some great conditions to cook the best meal we could Tobbe is in big trouble It's something huge down there Tobbe Edvin is a bit to cocky Everyone knows that cod is my spciality They call me Cod Tobbe for a reason But first we'll read some of your comments Haxanshus want us to do a food fight for pike next time It'll be hard to catch a pike where we are right now But maybe some other time we will Algis doesn't like my pronounciation of the word cod I can say whatever I want Malte Mustang want us to say hello So hello to you Malte Mustang Now we're heading out there and catch some cod This food fight is deadly serious I've done some research for the best recipe for cod During the last 12 months back home and also did som test cooking It's not easy to beat Tobbe when it comes down to cod You need to catch the best fish aswell with firm meat and not cod with worms in it I need a good Skrei Cod You might wonder what Skrei cod is You might've read it on a menu Skrei cod is almost like a regular cod with some differences It's the same species but the Skrei Cod lives far out in the sea during most of the year besides now when the come in here to mate It's the only time when we can catch them They swim all their life which make their meat extra good You can catch these Skrei Cods from january to April One small catch going up here to Norway this time of year the weather! It can be extremely windy with big waves And often the fishing is better far out in the sea We're here with Catch fishing trips at camp Steinfjord We have a few spots that are really good even close to shore even if it's windy out there our plan for today is to head out as far as possible If it's to windy we'll head back in and fish closer to shore The most fun will be to beat Edvin in this food fight It's time to jump in the boat and catch the best cod We're just outside the fjord now and found a good shallower spot where we thing the fish are we're gonna be driving around and look for fish on the sonar It's bumpy today We found a lot of fish here first try for Skrei cod now I'm gonna fish with. a tail that I've developed myself I think it will work for cod especially cod to eat I got one straight away - it's easy when you find them - what a strike! - you had one? - yeah, so hard Fish for 2 minutes and then we have fish No I lost it! No food for Edvin I'm already hungry Here it comes It's a really nice Skrei Cod a perfect size to eat this is almost 2-3 meals maybe 3kg No need to be bigger to get really nice cod filets Unhook this one You need to empty them from blood straight away I'll use my knife from Morakniv This one actually floats No worries if I drop it We'll do like this I'll do a cut here, and it's blood will run out This is my tray now, Edvin can have his own I'm loosing all my fish It's me in a nutshell always unlucky at first But then Tobbe is LT, Lucky Tobbe If I'm gonna beat Edvin this time I need a few cods To see which one is the best Big one! What the? - Is it a halibut? - could be I think it's a halibut No points for that one But fun to catch them - I think it's a fish - me too - smart comment huh? - yeah you are so smart It just runs again It can't be a cod Must be a halibut A good thing that Tobbe get tired from fishing halibuts To not be able to catch the real good cod ones I really hope it's a halibut I had something on here it comes Edvin - what is it? - I don't know here it comes It's a big cod! - is it? - no a halibut a nice one Let's see if we can grab it - come on Edvin - I'm trying it's not that easy I got it! It's so heavy - nice one Tobbe - thanks See how far out the lure is? like that a halibut like this is a great fish to eat But in February they are not allowed to catch and take home they are not allowed until April 1st So this one needs to go back Even though I really would've wanted to eat this one I need to do something now I will have to change lure and try something completely different look at this one, a squid looks really cool with these tentacles The cod will like this one down it goes It smells like Skrei now This is the life, be in the boat and fish for cod and look at this scenery the sun is out and the mountains are filled with snow Almost feels like a movie I got one now! Tobbe!? It's big! I think so I told you, when I catch one it's a big one no small fish filets for me This one is big - what is it? a cod? - biggest of the day It's a cod It doesn't run like a halibut I can see something It's big something huge down there - you see that? - I can see It's just white last push now that's not a small one just get it in the boat now I got it! I can barely lift it come on, lift it What a cod Edvin! This is Skrei fishing for real SO much fun My first cod is this one It fills my whole tray It must be closer to 12kg That felt so good, No need for me to fish anymore it's dinner for 7-8 persons It's so much fun so I need to dance around It's not that advanced to fish for cod Just grab a jig like this and throw it in the water and let it sink to the bottom which right now is at 50 meters You need really heavy jigheads of around 3-400gram when you are at the bottom the line gets slack I'll just retrieve the lure like 8 cranks and then do like this and twitch the rod and be ready to do a hookset when they bite There! What a strike! This is a good one MIne is better aswell we both have big ones on This one is not playing around I've got a big one look at that rod bend It's coming now! it's super big I got mine! Not as big as the first one but a big cod everybody should try this fishing It's something special look at mine Edvin big aswell we have enough food now Stage 2 now, we need to clean the fish welcome to.... the slaughter house Shall I start with the big one? or the smaller one? which may give me some smaller filets These are my cods, the tray is full and this one is Edvins only 3 of them Doesn't matter how many cods he's got That's not what matters I got a big one and a small one so I can chose which one it doesn't matter how many cods you catch I'll chose the big one more filets per fish they are quite heavy I got all slimey We got classic filet knife with 19cm blade from Morakniv It's great for big cods like this and the blade is very flexible It's important to cut out the filets You can get 2-3kg filets from this one in Sweden a cod filet is around 399:-/kg so this cod is worth almost 1000:- You really want as much meat as possible I'll start from the tail put an angle to the knife like this and cut until the bone and then angle the knife and cut along the bones all the way up right here it comes to a stop Turn the cod around and keep cutting all the way up I'm not gonna explain how I do it I do exactly as Tobbe But have a look at this beautiful meat Just keep on cutting up here Right by the bones Soon done with my first filet There we go, a really nice filet I'm gonna remove the skin and some bones over here It's quite quick and easy to cut out one side from a cod This is how a cod filet should look like You can see the result of us emptying them on blood before no blood whatsoever I removed both side filets on this one You could cut out some more meat from this one cheek filet cod tounge they are really expensive It would've been fun to cook something out of it but I feel like doing something with the filet I'll put this aside and come back to it later This is the result from my cod But I'm not gonna use them now I've got another plan I'll save these for later This cod has the filets that I need or maybe should I say meat this cod weighed around 14kg big stuff to handle like a wild boar as Tobbe said earlier you have some real delicacies on the cod this cheek that's really tasty and also this tounge muscle under so that's my plan for today tounge and cheek - that doesn't look to easy? - no it's advanced it's hard to get the whole cheek I can do like this now pull it away from the skin This piece is so tender You can get to pieces from this side From the tail and up here are the tail filet and up here is the back of cod If you plan to fry it in a pan keeping the skin is a good idea so it doesn't get stuck in the pan But that's not what I'm gonna do so I'm gonna remove the skin I'll do the same as before and just follow along the skin look at this skin well done by myself Not any skin anywhere This is almost 3kg okey, a small small piece of skin is left He thought he was good at this and then he just fail I can feel where the bones end and here there are no bones I'll make a cut right here this is the tail filet and the bones are here I'll cut everything off and this is a really nice back filet of cod I can smell victory with this one It's so nice and tender a big difference from the cods we catch during summer This is the piece I'm cooking my meal on I'll cut it in some smaller pieces look at it, it jiggles This is it Edvin We've borrowed the kitchen from catch fishing trips I never cooked in a professional kitchen like this before I can see gear I never seen before and gas ovens, totally new for me They are remodeling right now so it looks chaos I'm gonna use the cheek and tounge from the cod I'll keep it simple a cauliflower puré cheek and tounge cooked in butter with some burnt butter on top I'll make a maincourse cod, with some mushrooms and bacon and some stomped potatoes to go with so let's get started Edvin let's go Tobbe I'm gonna steal this one from you - I'll use some chili - chili? no it's white pepper they have been laying in some water and salt for 20 minutes I'll cut som cauliflower chop it up in some smaller pieces I'm gonna cook them These thick filets on the Skrei are hard to fry in a pan So I'm gonna braise it and first fry it quick and then in to the oven with it So I'll start and fry them now I need to find a frying spade You're way out on deep water now Tobbe Why do I help my contestant? This was the smallest one I could find I need a lot of butter and this cast iron pan I need to rinse my cauliflower And they need to boil now Now I just wait here we go They will be nice I have to watch out not to burn them I need to melt some butter I have a lot of things to do just flip them over now Look how nice they are Edvin I'm in the middle of a food fight now I can't look I need to melt the butter I'll take the rest of the butter talk about a click of butter These fish is gonna boil in butter I need to have enough butter to cover them all I'll melt this butter I'm done with these now It smells really good I'm so stressed now I can't even turn on the stove I need to melt my butter I don't know how to do it gas is scary I need to melt the butter slowly now I don't want to burn it everything that grows under the soil you can put in the water before it boils slow but steady need to keep it yellow I'll rinse off the cauliflower just mix it now I need some cream just keep on going It's to much cream I need to have a backupplan or loose some of the fluids let's see if this will work it seems to work just fine better than expected I'll cut som bacon to fry with some red onions I just chopped Yes! I found some starch It will be great I will make it Now I'm gonna fry some mushrooms with bacon You do that Tobbe a mix of chanterels and mushrooms let's put the fish in the oven the cod will have to come up to 50° it's ready when it's 52° so I'll take it out when it reach 50° You don't want it to be dry I'm gonna stomp some potatoes now and add some butter Now I add some red onions in here and some vineager I'll boil up my butter when it start to boil I'll turn off the stove add the fish and let them cook of the heat I'll start to plate my dish now My cod is perfect Edvin! add some of this It's my turn to plate now It's a puré, not a sauce here's my extremely sensitive fish I need to grab them with a pincett careful now like that, looks really nice I'm serving Tobias butterfried cod with mushroom and bacon while Edvin has done buttercooked cod cheek we've found 3 judges they will taste our dishes and grade them from 1-10 the 3 judges are: The chef from Catch fishing trips Marcus Norström a professional chef that have many years of experience Björn, a carpenter and a dedicated fisherman He loves to eat cod, and could eat it 7 days a week at last we have Sean Banan or his lookalike Thor_erik and electrician that often fish for Skrei you get the main course first butterfried skrei cod, with potato stomp and accesories - what you think? - looks really good - enjoy your meal - thank you Let's see if I get to keep my job well cooked the cod was really good good ingredients I'm a bit nervous now there are a lot at stake at this food fight I feel happy about my meal - are you ready for meal number 2? - absolutely butterboiled cod cheek with some cauliflower puré and burnt butter looks almost like a dessert thank you very tasty well cooked aswell the cod is so tender now it's time to hand out the grades the first course was really well made well cooked cod I would've wanted some more salt but I'll give it a 8,5/10 number 2 that we got the cod cheek was so tasty well salted I give it a 10/10 meal number 1 had a well cooked cod I would've wanted more salt but I give it a strong 7/10 number 2 was fantastic nothing to complain about 9,5/10 We've been served food by Tobbe and Edvin It's a surprise that they can actually cook I will not be as nice with the grades as the other two did there are always room for improvements Tobbes cod was best cooked but the taste was better in Edvins meal a 7/10 for Tobbe and 8/10 for Edvin We've double checked the result and we have a winner It is...
