This next recipe,
this is a kadayif dolmasi,
-
and this is a fantastically
light dessert.
-
And the way that we're going
to prepare this today is,
-
I've made a little filling.
-
And the filling is a combination of
chopped walnuts
-
and dried Turkish apricots.
-
With this filling, you could incorporate
whatever your favorite nuts should be.
-
Maybe pistachios or pine nuts
or any kind of nut, really,
-
and any kind of dried fruit,
for that matter.
-
So, for today,
-
I've selected walnuts and apricots.
-
This is also the kadayif,
-
and it's this very stringy,
strand-like, almost like a pasta.
-
And then what we're going to do is,
we're going to roll them.
-
I've pre-rolled a few here,
and so we're going to roll this.
-
And what we're going to do is take
a little bit of this filling
-
and put it right here at the top.
-
And then as we tuck this up and roll it,
-
we're going to fold the sides in
and just continue moving down.
-
Just like that,
OK?
-
And then we're going to place that
here.
-
OK, so these are ready to go.
-
I've preheated my oven to 350 degrees.
-
What I'm going to do now:
melt a little bit of butter.
-
And what's going to happen here is,
the melted butter,
-
we're going to put on top
of our kadayif dolmasi.
-
And it's really going to help those
get nice and golden brown in the oven.
-
So we're going to melt
our butter quickly.
-
All right,
our butter is just about melted.
-
So many people probably
have the question,
-
where could you find the kadayif?
-
I would say at a specialty store,
an ethnic market,
-
something like that, international
food, something of that nature,
-
typically carry this kind of an item.
-
So if you're looking to make these,
-
they're very simple, very
fast, and they're delicious.
-
so our butter is melted.
-
So now what we're going to do is
we're going to spoon the butter.
-
right over the tops,
just like that.
-
and now these are going to go
in the oven
-
and those are going to go in
there until they're golden brown.
-
I'd say about 15 minutes.
-
In the meantime, we're going
to make a little simple syrup.
-
And simple syrup is any time...
one part sugar, one part water.
-
And you can flavor your simple
syrup with anything you might like,
-
maybe a little bit of rose essence.
-
Today I've chosen lemon because
I think it goes really well
-
with this,
with this dessert.
-
And what I'm going to do is
put the sugar in the water,
-
I want to bring this up to a boil
so that it dissolves.
-
I'm also going to add that lemon juice,
just a splash.
-
There we are.
-
And we're going to bring this up
to a boil to dissolve the sugar.
-
And essentially,
when our kadayif are finished,
-
we'll take this simple syrup and we'll
drizzle it all the way over the top,
-
which will add a lot of sweetness to it,
-
but it'll also give it a
little bit of moisture.
-
And again, we just want to bring
this up to a boil so that sugar dissolves.
-
OK, so our sugar is dissolved now
-
and now we just want to wait for just
a minute till this comes up to a boil.
-
And then we're going to come back in
about 15 minutes
-
when our kadayif are
golden brown and we'll plate this up.
-
Our kadayif dolmasi have been in
the oven for about 15 minutes
-
and they're just about perfect.
-
They're golden brown and that's
exactly what we are looking for.
-
And there we are.
-
Now, what we're going to do
is we're going to, excuse me,
-
drizzle that simple syrup right
over the top of all of our kadayif.
-

And now we're ready to plate.

So I have a little spatula here
-
and we're going to very carefully
put these,
-
and I'm going to do three.
Right there in the center,
-
but there we have kadayif dolmas.
-
What a beautiful dessert.
