  • 0:00 - 0:01
    - Oh, [ _ ]! Why is it smoking?
  • 0:02 - 0:02
    - Huh?
  • 0:03 - 0:04
    Oh my god!
  • 0:04 - 0:05
    (screams)
  • 0:05 - 0:07
    - In this episode,
    we are doing things
  • 0:07 - 0:08
    a little differently.
  • 0:08 - 0:10
    We will be cooking
    a beautiful dinner
  • 0:10 - 0:13
    for all our hard working
    producers here
  • 0:13 - 0:15
at The Fat Kid Inside Studios
    and FEATR Media
  • 0:15 - 0:18
    and hopefully inspire you all
in the type of dishes and food
  • 0:18 - 0:20
    that you can cook
    for your family and friends
  • 0:20 - 0:21
    during this holidays.
  • 0:21 - 0:23
    So from us to you—
  • 0:23 - 0:25
    - [Everyone] Happy Holidays!
  • 0:38 - 0:41
    - So it's been
    a logistical nightmare, apparently,
  • 0:41 - 0:44
    all these tired,
    beautiful, happy faces.
  • 0:44 - 0:47
We did a lot of the preps,
you guys did the preps yesterday.
  • 0:47 - 0:48
    - Yes.
  • 0:48 - 0:50
    - So they prepped
    in the studio yesterday.
  • 0:50 - 0:53
I was coming from a shoot
so I had to prep at home
  • 0:53 - 0:54
    last night.
  • 0:54 - 0:57
    This is the first time
    we're actually properly cooking
  • 0:57 - 0:58
    for each other.
  • 0:58 - 1:00
    I feel like we cook
    in a studio format
  • 1:00 - 1:02
so when we do taste our foods
    and each other's foods
  • 1:02 - 1:04
    is really kind
    of just like standing,
  • 1:04 - 1:05
    you know, two bites,
    and then kind of go
  • 1:05 - 1:07
    to the next thing,
    there's always something happening.
  • 1:07 - 1:08
So this is the first time
    we're actually
  • 1:08 - 1:12
    all sitting down together
    as a big dysfunctional family
  • 1:12 - 1:13
    and feeding each other.
  • 1:13 - 1:16
    So I'm personally very excited
    to try Trish's food tonight.
  • 1:18 - 1:19
    I've heard magnificent things.
  • 1:20 - 1:21
    Trish, how are you feeling?
  • 1:22 - 1:23
    - I'm feeling good. Thanks.
  • 1:23 - 1:24
    Thank you for asking.
  • 1:25 - 1:28
    - Seth is our showboater
    so I feel like
  • 1:28 - 1:30
    he's been really excited
    to kind of showcase, like,
  • 1:30 - 1:32
    his true talent
    and kind of break out.
  • 1:32 - 1:33
    - There he is!
  • 1:33 - 1:33
    - Yeah?
  • 1:33 - 1:34
    (laughs)
  • 1:34 - 1:35
    - Break free, baby!
    That's what I'm going to...
  • 1:35 - 1:37
    - Nica, what are you making,
    dessert?
  • 1:37 - 1:38
    - I'm making a cake.
  • 1:38 - 1:39
    - Okay.
  • 1:39 - 1:40
    Ynna, Sam,
    how are you guys feeling?
  • 1:40 - 1:41
    - I'm excited.
  • 1:41 - 1:44
    - And then, Martin,
    feeling like death as usual?
  • 1:44 - 1:45
    - Yeah.
  • 1:45 - 1:46
    (laughs)
  • 1:47 - 1:48
    - All right. So we're going
    to be doing
  • 1:48 - 1:51
    last minute preps here,
    getting the food ready
  • 1:51 - 1:52
    for everyone,
    and then you're going
  • 1:52 - 1:54
    to basically come
    with each pair,
  • 1:54 - 1:57
    except I'm the solo one,
    and we're going to explain
  • 1:57 - 1:59
kind of the food that we did,
    the preps that we did,
  • 1:59 - 2:01
    and eventually
    have everyone taste it
  • 2:01 - 2:03
    and be really honest
    about each other's food.
  • 2:06 - 2:09
    - Hi! I'm Sam and I'm
    a food content creator
  • 2:09 - 2:10
    for TFKI.
  • 2:10 - 2:13
    - Hi! I'm Ynna
    and a junior food editor.
  • 2:13 - 2:15
    We are in charge
    of the appetizers.
  • 2:15 - 2:16
    - Yeah.
  • 2:16 - 2:17
    - And what we will be
    making today?
  • 2:17 - 2:18
    - Deviled eggs.
  • 2:19 - 2:21
    So normally when we talk
    about deviled eggs,
  • 2:21 - 2:24
    it's just simple—
    egg yolks mixed
  • 2:24 - 2:27
    with mayonnaise
with the egg white on top.
  • 2:27 - 2:30
    But today, I'm going
to be making it something special.
  • 2:30 - 2:31
    How about you,
what are you going to be making?
  • 2:31 - 2:34
    - Okay. So for appetizer,
    I will be making
  • 2:34 - 2:38
    a tropical crunch ceviche,
    because first thing,
  • 2:38 - 2:40
    when you eat, you need
    to open up the palate
  • 2:40 - 2:43
    so I opt to making
    something fresh,
  • 2:43 - 2:44
    something light.
  • 2:44 - 2:48
    So I really love ceviche,
    I love kinilaw,
  • 2:48 - 2:50
    and that's what I thought
    of making.
  • 2:50 - 2:53
    So I'm using pomelo
    for my ceviche
  • 2:53 - 2:56
    because personally,
I love all the tropical fruits.
  • 2:57 - 2:58
    - Okay. So while Ynna
    is doing that,
  • 2:58 - 3:01
    I'm actually making
    my egg yolk cream mixture.
  • 3:01 - 3:04
    So I'm just using Hellman's
    Real Mayonnaise,
  • 3:05 - 3:06
    cream cheese,
  • 3:07 - 3:08
    mustard,
  • 3:08 - 3:11
    and then we're going
to put some spices over here.
  • 3:11 - 3:13
And then, while this is going,
    I'm going to check
  • 3:13 - 3:17
    on my roasted bell peppers
    that I roasted off-cam.
  • 3:17 - 3:19
I'm going to return these back
    'cause what we're looking for
  • 3:19 - 3:21
    is this black coloring.
  • 3:21 - 3:23
    When you achieve this,
    it's easier to peel.
  • 3:24 - 3:26
    Around 15 minutes,
    and then we're going
  • 3:26 - 3:28
    to be mixing it.
  • 3:28 - 3:30
    We are going to put
    the egg yolks here,
  • 3:30 - 3:32
    and then egg whites,
    we're going to separate them.
  • 3:32 - 3:36
    We're going to fry them
    à la minute,
  • 3:36 - 3:37
    which means
    we'll do it on-site.
  • 3:37 - 3:40
    So we're just dunking
the eggs in ice cold water
  • 3:40 - 3:42
    to shock the eggs,
    to stop the cooking process
  • 3:42 - 3:47
and for you to be able
to crack it without getting burned.
  • 3:47 - 3:51
    So with the whites,
I am just going to make a brine.
  • 3:51 - 3:55
Brining is actually for extra flavor,
    but not only that,
  • 3:55 - 3:57
it also acts as a preservative.
  • 3:57 - 4:00
    - I'm getting frustrated
    with this pomelo.
  • 4:00 - 4:02
    - You want to switch preps?
  • 4:03 - 4:04
    - Really, you want to?
  • 4:04 - 4:05
    - Yes.
  • 4:05 - 4:06
    - What do you want me to do?
  • 4:07 - 4:08
    - I'm already done.
  • 4:08 - 4:08
    - Huh?
  • 4:08 - 4:10
    - You'll be left here.
    - No!
  • 4:11 - 4:12
    - Okay. So we're going
    to cut the eggs now.
  • 4:14 - 4:15
    Separate.
  • 4:17 - 4:18
The yolks are going to go here.
  • 4:19 - 4:22
Just be careful on dunking them
    'cause sometimes
  • 4:22 - 4:24
    the egg whites break.
  • 4:24 - 4:27
    I started cooking
when I was a first year college,
  • 4:27 - 4:30
    that was 10 years ago.
  • 4:31 - 4:33
    But started
    cooking professionally
  • 4:33 - 4:38
in 2019 when I was in Australia
    for a fine dining restaurant
  • 4:38 - 4:41
    which was specializing
    in Filipino food still.
  • 4:41 - 4:47
It was there that I actually
had a passion for Filipino food,
  • 4:47 - 4:49
and it's because of that restaurant.
  • 4:49 - 4:53
    Fast forward 2020,
I came back to the Philippines
  • 4:53 - 4:57
    because of the pandemic,
then I put up my restaurant
  • 4:57 - 4:58
    in Dumaguete.
  • 4:59 - 5:02
    Then, my restaurant failed
    because I was so clueless.
  • 5:02 - 5:03
    (chuckles)
  • 5:04 - 5:05
    - What happened?
  • 5:05 - 5:09
    - Then, I did content creation,
and Papa E (Erwan) was hiring.
  • 5:09 - 5:12
    I don't know,
    I brought some food here,
  • 5:12 - 5:13
    and maybe that's
    why they hired me.
  • 5:13 - 5:16
    - Yes, the food
    he brought were amazing.
  • 5:16 - 5:19
    - I'd rather have it thick
    than loose
  • 5:19 - 5:21
    because if it's too loose,
    then I'm going to need
  • 5:21 - 5:22
    more yolks.
  • 5:23 - 5:25
    - Oh, guys. I'm done
    with my pomelo.
  • 5:26 - 5:29
    First prep done.
    Let's go with mangoes.
  • 5:29 - 5:30
Oh my god, there's so much!
  • 5:31 - 5:33
    I'm just going to get
    all of the cheeks out.
  • 5:33 - 5:37
    So I started cooking
    when I was grade 2 or 3.
  • 5:38 - 5:39
I was just watching my mom.
  • 5:39 - 5:42
    It looked like she was
    having so much fun,
  • 5:42 - 5:43
and I wanted to do it too.
  • 5:43 - 5:46
And then, my interest in cooking
    developed further
  • 5:46 - 5:49
    when I started watching
    cooking shows—
  • 5:49 - 5:54
    like MasterChef, Food Network,
    Asian Food Channel.
  • 5:54 - 5:58
    Those were my
    go-to channels growing up.
  • 5:58 - 6:01
    - All right. So this is our
    Nuoc Cham buffalo glaze.
  • 6:02 - 6:04
    It looks runny now
    but when it thickens
  • 6:04 - 6:06
    due to the sugar content...
  • 6:06 - 6:08
    When it's heating up,
    it's going to be really,
  • 6:08 - 6:09
    really tasty.
  • 6:09 - 6:11
    We're going to put
    a lot of cayenne
  • 6:11 - 6:16
    'cause I want the guest
    to actually enjoy the spice,
  • 6:16 - 6:19
to the point where it tingles
    in your mouth.
  • 6:19 - 6:22
When it comes to the main course,
    you'll eat a lot.
  • 6:23 - 6:26
    - Oh my god, guys.
    I'm done with the mangoes.
  • 6:26 - 6:29
    I have here mango
    that I cut into like
  • 6:29 - 6:31
    really small cubes.
  • 6:31 - 6:36
    Now, I'll just do juicing
    of the lemons first.
  • 6:37 - 6:38
    - Again, still prepping
    egg whites.
  • 6:39 - 6:41
God. Why did I pick this recipe?
  • 6:42 - 6:42
    (grunts)
  • 6:43 - 6:45
    - Is this right? Or like this?
  • 6:45 - 6:46
    - Okay. Let's trade.
  • 6:46 - 6:48
    The eggs should be smooth.
  • 6:49 - 6:52
    - You really need muscles for this.
  • 6:53 - 6:55
What am I going to do?
  • 6:56 - 6:57
    - Just deshell everything.
  • 6:57 - 7:00
    This is almost everything
    that we can do here.
  • 7:00 - 7:02
We want to keep it fresh
    on-site also.
  • 7:02 - 7:04
So we will see you guys there.
  • 7:04 - 7:07
    And for the meantime,
    the main course
  • 7:07 - 7:09
    will be prepped here.
  • 7:09 - 7:10
    - Yup. Let's go.
  • 7:13 - 7:15
    - What is up, guys?
    My name is Seth.
  • 7:15 - 7:15
    - And I'm Trish.
  • 7:15 - 7:17
    - And we are food
    content creators of—
  • 7:18 - 7:19
    - FEATR Media.
  • 7:19 - 7:21
    - And The Fat Kid Inside Studios.
  • 7:21 - 7:22
And today, we are assigned with—
  • 7:22 - 7:24
    - The main dish!
  • 7:24 - 7:25
    - All right. Let's get on with it.
  • 7:25 - 7:29
    For me, I'm making
    a Thai-flavored,
  • 7:29 - 7:30
    inspired-ish pork belly.
  • 7:30 - 7:34
So it's going to be crispy skin,
    roasted, enough to feed
  • 7:34 - 7:35
    the whole family.
  • 7:35 - 7:36
    And you?
  • 7:36 - 7:38
    - Yes. So we took inspiration
    from Thai flavors,
  • 7:38 - 7:40
so he's making the pork belly
and I'm going to be working
  • 7:40 - 7:43
on the salad and the rice pilaf.
  • 7:43 - 7:45
    The rice pilaf is going
    to be Mojo Verde.
  • 7:45 - 7:47
    Oh, fancy, right? Fabulous.
  • 7:47 - 7:47
    - Fabulous.
  • 7:47 - 7:49
    With that, we wanted
    to go something different,
  • 7:49 - 7:52
    we want to be
a little more fun with it.
  • 7:52 - 7:53
So we're going to go ahead
    and start.
  • 7:53 - 7:55
    As you can see,
I have two pieces of pork belly.
  • 7:55 - 7:56
    Oh, shocks.
  • 7:56 - 7:59
    And if you can see,
    these have dimples,
  • 7:59 - 8:01
    it's because
    I already punctured it
  • 8:01 - 8:02
    with my knife.
  • 8:02 - 8:05
So I wanted to make holes in it
    and I wanted to help
  • 8:05 - 8:07
that dry as much as possible.
  • 8:07 - 8:09
    - I just want to say
    this is so exciting
  • 8:09 - 8:10
    because Seth and I
    have known each other
  • 8:10 - 8:12
    for quite some time now
    but it's our first time
  • 8:12 - 8:14
to work together on a dish.
  • 8:15 - 8:17
    - So what I'm going
to be doing is I'm going
  • 8:17 - 8:19
    to be cutting
    this pork belly in half.
  • 8:19 - 8:23
I do want it to have more
or less an even cooking time
  • 8:23 - 8:28
and I want also to have it
more surface for it to dry.
  • 8:28 - 8:30
    I'm just going to do
a light score at the bottom
  • 8:31 - 8:34
to make sure that the flavors
    go in later.
  • 8:34 - 8:38
So we're just going to do
    something really, really shallow
  • 8:38 - 8:42
just to ensure that a lot
of flavor gets into our pork.
  • 8:42 - 8:44
    How about you,
    how's your salad going along?
  • 8:44 - 8:45
    - It's still mango.
  • 8:45 - 8:46
    (chuckles)
  • 8:46 - 8:48
    So I'm still prepping
    the mangoes.
  • 8:48 - 8:49
I'm just going to blend this
    and make a simple
  • 8:49 - 8:50
    mango vinaigrette.
  • 8:50 - 8:53
    - So first, we want
to make sure that we make
  • 8:53 - 8:54
    our marinade for the pork.
  • 8:55 - 8:57
    The faster we marinade,
    the longer time it has
  • 8:57 - 8:59
    to actually have
    the ingredients come in.
  • 8:59 - 9:00
    - I'll help you with that.
  • 9:00 - 9:02
    - So I'm just going
to do a rough chop on these.
  • 9:02 - 9:04
So I want you to just
    quarter them
  • 9:04 - 9:06
'cause we're going to put them
    in a food processor later.
  • 9:06 - 9:09
    Put it on the pork
    and before cooking,
  • 9:09 - 9:10
we're going to scrape it out.
  • 9:10 - 9:12
    - Okay. I'm the sous chef
    here, guys.
  • 9:12 - 9:14
    - You can also do
a rough chop on this ginger.
  • 9:14 - 9:15
    - Okay.
  • 9:15 - 9:17
    - And I'm going to do
    just a little quickie smash
  • 9:17 - 9:18
    on this garlic.
  • 9:20 - 9:21
    - Strong.
  • 9:24 - 9:25
    - If you want to peel
    your garlic,
  • 9:25 - 9:26
    a nice quick little way,
  • 9:26 - 9:29
    so just put them around,
    between your hands
  • 9:29 - 9:30
    and then just...
  • 9:31 - 9:32
    And it comes right out.
  • 9:33 - 9:35
Okay. So I'm going to teach you
    how to devein...
  • 9:36 - 9:39
    "devein" or destem
    the kaffir lime,
  • 9:39 - 9:42
'cause we're going to blend this
    and I don't want that
  • 9:42 - 9:44
    tough stem in the center
    to ruin it.
  • 9:44 - 9:46
So what you want to do
    is just pull back.
  • 9:48 - 9:49
    - Okay. I can do that.
  • 9:49 - 9:50
    - And then, keep...
  • 9:51 - 9:52
    - Is this the same one
    they use for curries?
  • 9:53 - 9:54
    - Yeah. This is actually
    the same one they use
  • 9:54 - 9:55
    for curries.
  • 9:56 - 9:58
    - The quick chop
    of the lemongrass
  • 9:58 - 10:03
to really give this pork belly
    a fragrant aroma.
  • 10:03 - 10:04
    - You like lemongrass, Seth?
  • 10:04 - 10:05
    - I love lemongrass.
  • 10:05 - 10:07
    - Okay. 'Cause I know it's kind
    of an acquired taste, right?
  • 10:07 - 10:09
    Not everyone really likes
    lemongrass on their food.
  • 10:09 - 10:10
    - That's true.
  • 10:13 - 10:14
    Kaffir lime.
  • 10:16 - 10:17
    Our lemongrass.
  • 10:18 - 10:20
    I'm going to add
a little bit of salt to this.
  • 10:20 - 10:22
    - Okay. So while he's already
    working on that,
  • 10:22 - 10:24
I'll go back to my dressing,
so all I have to do
  • 10:24 - 10:28
    is just cut the acid
    or the citric fruit.
  • 10:28 - 10:29
I'm using lime in this case.
  • 10:30 - 10:31
    I'm just going
    to slice it in half
  • 10:31 - 10:33
    so later I can easily
    juice it out.
  • 10:33 - 10:37
    - So I'm going to grind
our paste that we're going to...
  • 10:38 - 10:39
that we're going to rub later.
  • 10:39 - 10:41
    Give it a few pulses.
  • 10:42 - 10:43
    - How about
    you plug it in first?
  • 10:43 - 10:45
    - I knew that. I knew that.
  • 10:45 - 10:46
    - That’s just how it is
    when you’re flustered.
  • 10:46 - 10:47
    - Don't show them!
  • 10:48 - 10:48
    (giggles)
  • 10:48 - 10:51
Let me just plug this in
    'cause I knew that
  • 10:51 - 10:52
    it was unplugged.
  • 10:52 - 10:54
    - Of course, he knew that.
  • 10:57 - 10:58
    Oh, oh.
  • 10:58 - 10:59
Is the extension cord plugged in?
  • 10:59 - 11:00
    - Yeah.
  • 11:03 - 11:04
    Here we are.
  • 11:04 - 11:06
    - All right. Take three.
  • 11:06 - 11:06
    - Take three.
  • 11:06 - 11:07
    - Press it!
  • 11:08 - 11:09
    (screams in shock)
  • 11:13 - 11:15
    I can already imagine it
    with the pork belly.
  • 11:17 - 11:18
    - I don't want
to beat them up too much.
  • 11:18 - 11:19
    - It smells so good.
  • 11:19 - 11:21
    Wait. There's a leaf here.
  • 11:21 - 11:22
    - Oh, [ _ ]! Why is it smoking?
  • 11:22 - 11:23
    - Huh?
  • 11:24 - 11:25
    Oh my god!
  • 11:25 - 11:25
    (screams)
  • 11:26 - 11:27
    - Unplug it.
  • 11:28 - 11:29
    - Why is it smoking?
  • 11:30 - 11:32
    - 'Cause that's 110V.
  • 11:33 - 11:34
    - Smelled like fire.
  • 11:34 - 11:35
    (chuckles)
  • 11:36 - 11:38
    - It’s hazardous when we’re together.
  • 11:38 - 11:39
    Okay.
  • 11:39 - 11:41
    I'm just going to blend
    my mangoes.
  • 11:41 - 11:43
Put a little bit of some acid.
  • 11:43 - 11:45
I'll put a little bit of olive oil
  • 11:46 - 11:47
    and some honey.
  • 11:47 - 11:50
    You might be thinking
I'm making a fruit juice, but no,
  • 11:50 - 11:51
    not even close.
  • 11:55 - 11:55
    Okay.
  • 11:55 - 11:58
    - I'm going to start seasoning
my pork belly with some salt
  • 11:58 - 11:59
    to get it started.
  • 11:59 - 12:02
    This will help it
    have more flavor.
  • 12:02 - 12:03
    Hey, I want to try.
    I want to try.
  • 12:03 - 12:04
    Put some over here.
  • 12:04 - 12:04
    - Where?
  • 12:04 - 12:06
    - Here on my wrist.
  • 12:07 - 12:09
    - What do you think
    does it lack?
  • 12:10 - 12:10
    - Hey!
  • 12:10 - 12:13
    - Just kidding. It's delicious.
  • 12:13 - 12:15
    (chuckles)
  • 12:15 - 12:17
    - So after I blend this actually,
    I might cook it
  • 12:17 - 12:21
    over low heat just because
    we work with pork
  • 12:21 - 12:23
    right beside it,
    just for sanitary
  • 12:23 - 12:24
    and hygienic purposes.
  • 12:24 - 12:26
    - So what I'm doing here,
    I'm really working
  • 12:26 - 12:30
    the salt into those scores
    that I made.
  • 12:30 - 12:32
    This will help ensure
    a flavorful meat.
  • 12:32 - 12:39
And I'm going to rub in
    our blended herb vegetable
  • 12:39 - 12:40
    spice mix.
  • 12:41 - 12:43
    So come join me, Trish.
    We're going to boat this.
  • 12:44 - 12:45
    - Oh, I thought we were done.
  • 12:45 - 12:46
    - No, we're going to boat them.
  • 12:46 - 12:49
So I'm going to be covering this
    with foil at the bottom
  • 12:49 - 12:51
    but leaving the skin exposed.
  • 12:52 - 12:55
I'm just going to set this aside
    and we can set up
  • 12:55 - 12:57
whatever else you have to do.
  • 12:57 - 12:59
    - Yeah. I'm just going
to clean up the kitchen counters
  • 12:59 - 13:01
    so we won't contaminate
    any food.
  • 13:01 - 13:05
    All right. So I realized
that the Mojo Verde is best done
  • 13:05 - 13:09
    when it's fresh to avoid
    the herbs from browning,
  • 13:09 - 13:11
so I'll just do that tomorrow.
  • 13:11 - 13:12
    And then right now,
    I'm just going to make
  • 13:12 - 13:14
    the simmer, and then
    you can make your sauce
  • 13:14 - 13:15
and we'll call it a day.
  • 13:15 - 13:16
    - Yeah.
  • 13:17 - 13:22
I am making a nice, like,
    spicy, garlicky Thai sauce
  • 13:22 - 13:25
to top off with our pork later.
  • 13:25 - 13:28
So I'm going to be just mincing
    some red onions.
  • 13:28 - 13:30
    - This is actually really,
    really simple.
  • 13:30 - 13:32
All we have to do is just wait
    for it to simmer
  • 13:32 - 13:35
    just so we can kill
    any bacteria or any germs,
  • 13:35 - 13:37
and then we can turn off
the fire and let it cool.
  • 13:37 - 13:40
    It's already simmering,
I'm just going to turn it off
  • 13:40 - 13:42
and set this aside to cool down.
  • 13:42 - 13:45
    - So guys, what I'm putting here,
    just garlic, onion,
  • 13:45 - 13:49
    I'm going to add
    some fish sauce, sugar,
  • 13:49 - 13:51
    lime or lemon to taste,
  • 13:51 - 13:54
    you can add chilis
    if you want it spicy,
  • 13:54 - 13:56
    but it's also very,
    very important
  • 13:57 - 14:00
to do this maybe a day before
    'cause you want those flavors
  • 14:00 - 14:03
    to really, you know,
    get to know each other.
  • 14:03 - 14:05
    I think we just got
to keep this in the fridge,
  • 14:05 - 14:08
cover it so it doesn't stink up
    the whole place
  • 14:08 - 14:09
    'cause it is fish sauce.
  • 14:10 - 14:11
    - We just have to clean up
    and we're done.
  • 14:12 - 14:14
    - Get ready for tomorrow, right?
  • 14:14 - 14:14
    - Let's go.
  • 14:17 - 14:21
    - I'm going to completely break
    the treatment of this video,
  • 14:21 - 14:23
and I am so sorry about that.
  • 14:23 - 14:26
I had an absolutely crazy day.
  • 14:26 - 14:29
I just came from a shoot
    with Dahlia
  • 14:29 - 14:31
and which I'm super grateful for.
  • 14:31 - 14:33
    Like, this video is all
    about being thankful.
  • 14:34 - 14:37
And that was such a great shoot,
    and it's just great
  • 14:37 - 14:39
    at this age—you know,
    I've been doing this
  • 14:39 - 14:41
    for a long time—
to kind of still do these projects.
  • 14:42 - 14:43
    It's really great.
  • 14:44 - 14:48
But now, as you can see,
    it is 9:30 p.m.,
  • 14:48 - 14:49
    I am absolutely exhausted.
  • 14:49 - 14:53
    And tomorrow is when
    we'll be cooking for everyone.
  • 14:53 - 14:58
    And I feel this dinner
that we're doing is really special,
  • 14:58 - 15:00
and that's why I'm putting in
    the extra hours
  • 15:00 - 15:02
    and the extra effort
    to serve good food.
  • 15:03 - 15:05
By now you know what I'm making,
so I'm going to go ahead
  • 15:05 - 15:06
    and start the prep.
  • 15:06 - 15:09
    So really important tonight
is to cook the beef cheeks down
  • 15:09 - 15:10
    for about 12 hours.
  • 15:11 - 15:13
    And then after that,
    I'm going to start
  • 15:13 - 15:15
    my lobster stock,
    and then figure out
  • 15:15 - 15:17
    how to bring
    those two sauces together.
  • 15:17 - 15:20
    The dish is really inspired
    by a mechado,
  • 15:20 - 15:22
    very loosely
    in terms of flavors,
  • 15:22 - 15:25
and just kind of cleaning that up
    and thinking of ways
  • 15:25 - 15:27
    how would I serve it
    in a very special
  • 15:27 - 15:29
but still kind of very homey way.
  • 15:30 - 15:31
    And I really hope
    that people like it.
  • 15:32 - 15:34
    It's in my head now.
    I haven't executed it.
  • 15:35 - 15:37
    But hopefully,
    it turns out pretty good.
  • 15:38 - 15:41
So the idea here is to play
    with the classic flavors
  • 15:41 - 15:44
of what makes a beef mechado
and kind of like turn it
  • 15:44 - 15:46
    on top of its head.
  • 15:46 - 15:49
And I'm going to be making
    the beef cheeks
  • 15:49 - 15:51
    with your aromatics.
  • 15:51 - 15:53
    But I'm not going
    to be using those aromatics,
  • 15:53 - 15:54
    I'm going to be discarding
    them later.
  • 15:55 - 15:56
    But I'm going to cook
    everything together
  • 15:56 - 15:59
for about 12 hours in the oven,
    and that's just going
  • 15:59 - 16:00
to give it so much great flavor,
  • 16:00 - 16:01
and then I'm going to put it
    in the fridge
  • 16:01 - 16:03
    and then I'm going
    to sear them again
  • 16:03 - 16:05
    to retain that sauce,
and then just clean it up,
  • 16:05 - 16:08
    sieve it, mix that
    with the lobster broth
  • 16:08 - 16:09
    that we're making,
    and that's just going
  • 16:09 - 16:12
    to make a really thick,
    kind of like almost
  • 16:12 - 16:16
    au jus like demi-glace sauce
which will carry all the flavor
  • 16:16 - 16:18
    from all the elements
    that we're adding there.
  • 16:18 - 16:20
And then, I have to work
    on a few other things.
  • 16:20 - 16:22
    Like, tomorrow,
    I'll be making an onion
  • 16:22 - 16:25
    and ube soubise,
so it's just kind of like a...
  • 16:25 - 16:29
    Imagine a mashed potato
    blended with caramelized onions.
  • 16:29 - 16:30
    It's beautiful.
    I've done that before.
  • 16:31 - 16:33
    And I think that's it.
  • 16:33 - 16:36
    Okay. New day, new apron.
  • 16:36 - 16:38
    Feeling slightly rested.
  • 16:38 - 16:39
Got about five hours of sleep.
  • 16:40 - 16:41
    Let's check on our prep.
  • 16:42 - 16:48
So here is our lobster stock
    that's reduced
  • 16:48 - 16:49
    for about three hours.
  • 16:50 - 16:53
This thing was full till here
so we really reduced it down,
  • 16:53 - 16:57
    and it is so intense
    and beautiful.
  • 16:58 - 16:58
    Yum.
  • 17:00 - 17:01
    While that's going,
    we're basically going
  • 17:01 - 17:04
    to take our lobster tails
    right here
  • 17:04 - 17:07
and I'm going to poach that
    in some butter,
  • 17:07 - 17:09
but I'm going to basically do it
    in a water bath
  • 17:09 - 17:10
    so the temperature
    is controlled.
  • 17:10 - 17:13
I think I'm going to go
    for about 54°C
  • 17:13 - 17:15
    for about 20 minutes,
    so this should get
  • 17:15 - 17:18
    nice and tender
    but not like breakaway tender
  • 17:18 - 17:20
    and that's just going
    to infuse all the butter
  • 17:20 - 17:24
    into the lobster tails
    which would be fantastic.
  • 17:27 - 17:29
    - We are both assigned
    to the dessert,
  • 17:29 - 17:31
    so we’re in charge
    of the finale.
  • 17:31 - 17:34
    We have to finish...
    what exactly?
  • 17:35 - 17:38
    - I actually am planning
    to make a carrot cake,
  • 17:38 - 17:41
    but then I've watched something
    on TikTok, Chef,
  • 17:41 - 17:43
    wherein he put
    the whole cheesecake
  • 17:43 - 17:47
    in between two layers
    of carrot cake.
  • 17:47 - 17:49
So I was like, ooh, that's cool.
  • 17:49 - 17:51
    Okay. Perfect.
    I'm going to do that
  • 17:51 - 17:53
but I'm going to make it
    five layers
  • 17:53 - 17:55
    so that'd be around
    roughly this height,
  • 17:56 - 17:58
    so it'll really be
    the centerpiece.
  • 17:58 - 18:00
    - So when you see it,
    you won’t know
  • 18:00 - 18:03
    if there's a wedding
    or a birthday—
  • 18:03 - 18:04
    no clue at all.
  • 18:05 - 18:06
What's the frosting going to be?
  • 18:06 - 18:08
    - The frosting is going
to be cream cheese as well.
  • 18:10 - 18:12
    But it's a light
    cream cheese frosting,
  • 18:12 - 18:14
    so not too overwhelm
    the cream cheese
  • 18:14 - 18:16
    and the cheesecake
    on the center.
  • 18:16 - 18:19
    And then, I'm planning
    to have a sauce
  • 18:19 - 18:20
    that would go with it.
  • 18:21 - 18:22
    And then,
    maybe like individual...
  • 18:22 - 18:23
    - Sweet and sour?
  • 18:23 - 18:24
    (laughs)
  • 18:24 - 18:27
    - Or barbeque, teriyaki.
    - Adobo. Humba.
  • 18:27 - 18:30
    - A spiced butterscotch sauce.
  • 18:30 - 18:32
    - My only request
    is there'd be no raisins.
  • 18:33 - 18:35
    - No, it's okay.
    I don't like raisins either.
  • 18:35 - 18:37
    - That's why we're a pair.
  • 18:37 - 18:38
    So for me...
  • 18:38 - 18:41
    She's going to be making
    the centerpiece—carrot cake.
  • 18:41 - 18:43
    She's going to make it
    beautiful for sure.
  • 18:43 - 18:44
    For mine...
  • 18:44 - 18:45
    I don't know if I'm going
    to say it right.
  • 18:45 - 18:48
I'm sure I'm saying it wrong,
    so Erwan can just
  • 18:48 - 18:50
    correct me tomorrow.
  • 18:50 - 18:52
    It's called Vacherin Au Citron.
  • 18:53 - 18:53
    So basically it's a...
  • 18:53 - 18:54
    - Fancy.
  • 18:54 - 18:55
    - Fancy.
  • 18:55 - 18:55
    - Fancy.
  • 18:55 - 18:57
    - That's why it's very...
  • 18:57 - 18:59
    It looks complicated
    but it's only complicated
  • 18:59 - 19:02
    because there
    are multiple components to it.
  • 19:02 - 19:04
So I'm going to be making
    lemon sorbet,
  • 19:04 - 19:08
    lemon curd, meringue,
    and some lemon syrup.
  • 19:08 - 19:10
So it's all going to go together.
  • 19:10 - 19:11
    - I love how fresh it is.
  • 19:11 - 19:12
    - Right?
  • 19:12 - 19:14
    So some are fresh
    and some are not fresh.
  • 19:14 - 19:15
    (laughs)
  • 19:16 - 19:21
    - Okay. So the beauty
of this recipe that we'll do
  • 19:21 - 19:24
    is that you can actually
    make this ahead of time.
  • 19:24 - 19:28
    So this is sour cream,
    just for added acidity.
  • 19:28 - 19:30
    You can use heavy cream
    if it's not available.
  • 19:30 - 19:32
    - How do they add the acidity?
  • 19:32 - 19:36
    - If you only have cream,
    you can actually add, like,
  • 19:36 - 19:41
    for a cup of cream,
    a tablespoon of your acid,
  • 19:41 - 19:42
    so lemon or vinegar.
  • 19:42 - 19:46
    And then, I have here
    three blocks of cream cheese
  • 19:46 - 19:49
    and some white sugar.
  • 19:49 - 19:51
    And then, vanilla,
it depends on what you want,
  • 19:51 - 19:53
you can also use lemon extract.
  • 19:54 - 19:55
    And then, two eggs.
  • 19:55 - 19:56
    - All right. Cool.
  • 19:56 - 19:58
    - And then, just cream
    everything together,
  • 19:58 - 19:59
    and then that's it.
  • 19:59 - 20:03
    - So the first thing I can do
    is actually the lemon curd.
  • 20:03 - 20:06
    It's not the easiest.
The easiest is the lemon syrup.
  • 20:07 - 20:09
    And so for this one,
I need a lot of sugar.
  • 20:09 - 20:10
    It would be enough.
  • 20:12 - 20:15
    And it’s like making
    pastry cream
  • 20:15 - 20:19
    but with more of that
    sour tingling style.
  • 20:20 - 20:23
    Plus the lemon juice
    we squeezed earlier.
  • 20:23 - 20:25
    - So I'm just adding
    my sour cream, Chef,
  • 20:25 - 20:25
    to this one.
  • 20:26 - 20:29
    And then, we're going
    to whip this again
  • 20:29 - 20:31
    while I prepare the eggs.
  • 20:31 - 20:32
    - I love it.
  • 20:32 - 20:34
    So while you're preparing
    the eggs...
  • 20:34 - 20:36
    So this process,
    it's called tempering.
  • 20:36 - 20:38
    It's usually not done
    for lemon curd.
  • 20:38 - 20:41
    Usually, for lemon curd,
    it’s all in one go.
  • 20:41 - 20:43
    Just one pot,
    mix everything together
  • 20:43 - 20:48
    until they form the thickness
    or consistency you prefer.
  • 20:48 - 20:52
    Then, slowly,
    so tempering cooks your eggs
  • 20:52 - 20:55
    without coagulating everything,
    making the temperature equal
  • 20:55 - 20:57
    for both liquids.
  • 20:57 - 20:59
    And then from there,
    put it back.
  • 21:02 - 21:04
    Right. So the texture
that I want isn't there yet
  • 21:04 - 21:10
    but at this moment,
I'll add half a cup of butter.
  • 21:11 - 21:15
    So yeah, lemon curd
is full of sugar and fat,
  • 21:15 - 21:18
but you don't eat a lot of it
    when it's put
  • 21:18 - 21:20
    into the pastry.
  • 21:20 - 21:23
    Usually, just dot it
    or a tablespoon.
  • 21:23 - 21:25
    - So one egg at a time.
  • 21:26 - 21:28
    Then, I'm going to add
    our vanilla flavor.
  • 21:32 - 21:34
    - So my consistency,
I don't want it to be like
  • 21:34 - 21:37
    the spread curd.
  • 21:37 - 21:39
    So I just want it
    to be sauce consistency
  • 21:39 - 21:41
    which is this.
  • 21:42 - 21:44
    I'll finish it up
    with some zest.
  • 21:45 - 21:48
    All right. So that's it.
    This is my first component.
  • 21:48 - 21:53
For this one, my batter is done.
  • 21:54 - 21:56
    - Okay. We'll make
    the lemon sorbet.
  • 21:56 - 21:58
    So equal parts of lemon
    and water.
  • 21:58 - 22:00
    Lemon juice.
  • 22:00 - 22:04
    So noisy. What is that?
    So annoying.
  • 22:05 - 22:10
    - So I'm going to do
    a bain-marie for my cheesecake.
  • 22:10 - 22:13
    If there's no bain-marie,
    it's going to rise quickly
  • 22:13 - 22:16
    and that's going to crack,
and then it's going to burn.
  • 22:16 - 22:17
    - Who is Marie?
  • 22:17 - 22:20
    So ice cream,
    obviously it comes from...
  • 22:20 - 22:23
It has to have a base
    called crème anglaise.
  • 22:23 - 22:27
    Crème anglaise is milk-based,
    sometimes cream,
  • 22:27 - 22:29
    and you usually thicken it
    with egg yolk
  • 22:29 - 22:31
    and sweetened with sugar,
    flavored with vanilla beans,
  • 22:31 - 22:33
    or whatever flavor
    you might prefer.
  • 22:33 - 22:37
    Now, sorbet is more
    of just the juice.
  • 22:38 - 22:42
    So let's say lemon sorbet—
    lemon juice, water, sugar.
  • 22:42 - 22:45
    So the thing is,
it doesn't freeze like ice cream.
  • 22:45 - 22:47
    With sorbet,
    it's like you're making ice.
  • 22:47 - 22:50
    It’s like making ice candy,
    but fancier.
  • 22:51 - 22:53
    People usually say,
    "There's so much sugar."
  • 22:53 - 22:55
    You're not going to eat
    the whole cake, right?
  • 22:57 - 22:58
    I'm not mad.
  • 22:58 - 22:59
    Because!
  • 22:59 - 23:00
    (laughs)
  • 23:01 - 23:03
    What I like about
    this machine thing,
  • 23:03 - 23:05
    it's really just like
    you're making ice candy
  • 23:05 - 23:06
    and it'll handle it.
  • 23:06 - 23:08
    Cover this, put it
    in the freezer,
  • 23:08 - 23:10
    and hopefully, it solidifies.
  • 23:10 - 23:12
    So next, we're going
    to make meringue.
  • 23:12 - 23:13
    - Meringue.
  • 23:13 - 23:16
    - And I just wanted it
    to provide the texture
  • 23:16 - 23:17
    on our whole dessert.
  • 23:18 - 23:19
    Just helps stabilize
    the egg whites.
  • 23:27 - 23:30
    Add a pinch of salt
and we'll mix it on medium.
  • 23:31 - 23:35
    Now that I have microbubbles,
    I'll gradually add my sugar.
  • 23:35 - 23:38
    We don't dump it in
    all in one go,
  • 23:38 - 23:40
    that's because you're going
    to destroy all the bubbles
  • 23:40 - 23:41
    that you've made.
  • 23:41 - 23:42
    So just do it slowly.
  • 23:44 - 23:47
    All right. So this is
    the right consistency
  • 23:47 - 23:48
    I'm looking for.
  • 23:49 - 23:52
    - Wow!
    - It's stiff but soft.
  • 24:01 - 24:03
    - So now, it's time for frosting.
  • 24:03 - 24:04
    Cream cheese.
  • 24:05 - 24:07
I'm going to cream this first.
  • 24:07 - 24:08
    Oh, shoot. Wait.
  • 24:10 - 24:11
    I'll check my cake first.
  • 24:11 - 24:12
    - I'll take care of this.
  • 24:16 - 24:17
    - I'm back.
  • 24:17 - 24:18
    - And better than ever.
  • 24:19 - 24:21
    - Time to add the butter.
  • 24:21 - 24:23
    This is softened,
    so I prefer the butter
  • 24:23 - 24:26
    to be softened
    rather than the cream cheese
  • 24:26 - 24:28
because we need the cream cheese
    to be more stable
  • 24:28 - 24:29
    than the butter.
  • 24:29 - 24:32
    We're just going
    to cream both together.
  • 24:33 - 24:36
    So we're going to add
    our vanilla for flavor.
  • 24:37 - 24:38
    Okay.
  • 24:38 - 24:40
    This looks better now.
  • 24:40 - 24:42
    It's now time to assemble
    our cake.
  • 24:43 - 24:48
So I love to add glucose
    at the base
  • 24:49 - 24:55
so this acts as a glue
    later on to our cake.
  • 24:55 - 24:58
So this is now the first layer.
  • 24:58 - 24:59
    Thank you, Chef.
  • 24:59 - 25:01
    So just that.
  • 25:08 - 25:10
    Second layer in.
  • 25:13 - 25:15
    Then, it's time
    for the cheesecake.
  • 25:23 - 25:25
    See, it's so tall already.
  • 25:26 - 25:28
    Is this already
    centerpiece-worthy, Chef?
  • 25:28 - 25:29
    - Attraction.
  • 25:32 - 25:37
    - One tip that I like
for the top layers to not fall,
  • 25:37 - 25:40
    especially since
    the carrot cake is heavy,
  • 25:40 - 25:41
    is to use dowels.
  • 25:41 - 25:46
So my favorite type of dowel
    for this type of cake
  • 25:46 - 25:47
    is boba straws.
  • 25:48 - 25:49
    Two dowels.
  • 25:51 - 25:54
Push it using the excess dowel.
  • 25:54 - 25:56
    Another one. Push it.
  • 25:57 - 25:59
    Then, we're going
    to crumb coat our cake
  • 25:59 - 26:01
with the rest of our frosting.
  • 26:01 - 26:04
    Experts, like my mom,
    she doesn't do crumb coat,
  • 26:04 - 26:05
    just that.
  • 26:05 - 26:07
    - So after this,
    just the crumb coat and...
  • 26:07 - 26:09
    - A light crumb coat,
    and then I'm going
  • 26:09 - 26:13
    to finish everything tomorrow,
    and then that's it.
  • 26:31 - 26:33
    - Close the door, please.
Is this how you are at home?
  • 26:33 - 26:33
    - I'm sorry.
  • 26:33 - 26:34
    (chuckles)
  • 27:04 - 27:05
    - That should come right off.
  • 27:05 - 27:06
    Aw!
  • 27:08 - 27:09
    - You thought I was mad.
  • 27:10 - 27:11
    (sobs)
  • 27:12 - 27:13
    - It's delicious.
  • 27:27 - 27:28
    (laughs)
  • 27:33 - 27:36
    - Okay. So to start
    and to awaken the palate,
  • 27:36 - 27:38
    I present you
    my tropical crunch ceviche.
  • 27:40 - 27:43
    It features lapu-lapu
    and shrimp for seafood
  • 27:43 - 27:46
and it's marinated in a mixture
    of citrus mix
  • 27:46 - 27:48
    which is calamansi and lemon.
  • 27:48 - 27:52
    And it's then tossed
in a vibrant mix of pomelo,
  • 27:52 - 27:56
    mangoes, cucumbers,
    tomatoes, and red onions.
  • 27:56 - 28:02
    Then for the crunch,
I made some crispy wanton chips.
  • 28:02 - 28:04
    You can either dip it
    or crumble it,
  • 28:04 - 28:05
    however you like. So, enjoy.
  • 28:05 - 28:07
    (applauds)
  • 28:08 - 28:11
    I'm really thankful
    for the guidance, support,
  • 28:11 - 28:13
    and your brilliant creativity.
  • 28:13 - 28:15
    Being around
    such talented people
  • 28:15 - 28:18
    makes me feel inspired everyday,
    and I just can't wait
  • 28:18 - 28:20
to learn more from you all.
  • 28:20 - 28:21
    Thank you.
  • 28:21 - 28:22
    Thank you so much.
  • 28:22 - 28:23
    (applauds)
  • 28:23 - 28:26
    - As a fan of retro cooking,
    this is a 70s inspired
  • 28:26 - 28:27
    deviled eggs.
  • 28:27 - 28:29
    So pan-cooked fried egg whites
    at the bottom.
  • 28:30 - 28:32
You have a roasted bell pepper
    cream mixture on top,
  • 28:32 - 28:36
    followed by a Nuoc Cham
    buffalo glaze that's kind
  • 28:36 - 28:39
of like a fusion between Thai
    and American cuisine.
  • 28:40 - 28:42
    Then, it's finished off
    with tarragon and chives.
  • 28:42 - 28:43
    (applauds)
  • 28:43 - 28:45
    I am really thankful for...
  • 28:46 - 28:51
    maybe the opportunity
that I am able to work
  • 28:51 - 28:55
with a team that is driven
    with a vision to promote
  • 28:55 - 28:59
    Filipino cuisine/heritage
    in general.
  • 28:59 - 29:00
    (applauds)
  • 29:01 - 29:02
    - Oh my gosh.
  • 29:08 - 29:09
    - Oh, yeah.
  • 29:09 - 29:10
    Try my pork belly.
    - Yummy?
  • 29:10 - 29:11
    Not too much?
  • 29:12 - 29:13
    - It needs the fish sauce.
  • 29:14 - 29:16
    Juicy, tender?
  • 29:17 - 29:18
    - That's good.
  • 29:20 - 29:21
    - Whoa!
  • 29:21 - 29:23
    - Wow.
  • 29:24 - 29:28
    - So here I have
    a whole roast pork belly
  • 29:28 - 29:29
    with Thai-inspired flavors.
  • 29:30 - 29:31
    So I flavored it
    with a kaffir lime,
  • 29:31 - 29:35
    lemongrass, ginger, garlic,
    and season it with salt,
  • 29:35 - 29:39
dried it for about two days,
    and cooked it really nice
  • 29:39 - 29:40
    and slow.
  • 29:40 - 29:42
    On the side, you have
    Thai fish sauce.
  • 29:42 - 29:45
    I'm really thankful
    for your patience
  • 29:45 - 29:48
    and your motivation,
and just your spirit of work
  • 29:48 - 29:51
    really inspired us
    to just become better
  • 29:51 - 29:57
at our jobs and just try
    to deliver what you guys
  • 29:57 - 29:58
    see in us.
  • 29:58 - 30:01
And we believe, and I believe
    that you see greatness
  • 30:01 - 30:02
in each and every one of us.
  • 30:02 - 30:04
    So I'm very, very thankful
    for that.
  • 30:04 - 30:05
    - Amen.
  • 30:05 - 30:06
    (applauds)
  • 30:07 - 30:10
    - So I've made a Mojo Verde
    rice pilaf,
  • 30:10 - 30:13
    so it's basically herbs
    that were blended together
  • 30:13 - 30:15
and we cooked the rice in it.
  • 30:15 - 30:17
    And then, we also have
a side salad to go with it,
  • 30:17 - 30:19
    so you have your vegetables
    for the day.
  • 30:19 - 30:21
    And it's topped
    with the mango dressing. Yes.
  • 30:21 - 30:24
    For that Thai-inspired flavor.
  • 30:24 - 30:27
    So 2024 was
    a different year for me,
  • 30:27 - 30:28
    probably one
of the beat years of my life,
  • 30:28 - 30:31
    and it started off
    very differently,
  • 30:31 - 30:32
    I didn't think
    I would be here today.
  • 30:32 - 30:34
    And I'm thankful for each
    and every one of you—
  • 30:34 - 30:39
    producers, videographers,
    editors, everybody,
  • 30:39 - 30:41
    including those who work
    on and off camera,
  • 30:41 - 30:43
    I'm so, so, so grateful
    because of your patience.
  • 30:43 - 30:46
    And 2024 is full
    of big milestones for me
  • 30:46 - 30:48
    and you guys are definitely
    one for the books.
  • 30:48 - 30:51
So thank you and I hope
    we continue to work together.
  • 30:51 - 30:53
    (applauds)
  • 30:57 - 30:58
    - Oh, wow.
  • 30:58 - 31:00
    (laughs)
  • 31:01 - 31:02
    - That's Jennifer Coolidge.
  • 31:02 - 31:03
    (laughs)
  • 31:03 - 31:05
    - Only in the bedroom.
  • 31:07 - 31:07
    That's good.
  • 31:07 - 31:08
    - Whoo!
  • 31:08 - 31:09
    (applauds)
  • 31:09 - 31:11
    - That's the go signal, guys.
    Let's eat!
  • 31:14 - 31:15
    - Yeah. The pork's next level, Seth.
  • 31:18 - 31:19
    - That is so good.
  • 31:19 - 31:20
    Wow.
  • 31:23 - 31:24
    - So my dad knew him.
  • 31:24 - 31:26
So we would go on his boat.
  • 31:27 - 31:29
    - So, guys, what do you think?
  • 31:30 - 31:32
    - Woah, so confident.
  • 31:34 - 31:35
    - You were crying.
  • 31:38 - 31:38
    - Hey!
  • 31:39 - 31:41
    (laughs)
  • 31:41 - 31:43
    - You know that rice cake
    in front of the...
  • 31:43 - 31:46
    - So obviously my favorite
    is the kinilaw, or ceviche.
  • 31:46 - 31:49
    I finished one entire bowl.
  • 31:51 - 31:52
    - Wow.
  • 31:52 - 31:53
    (laughs)
  • 31:53 - 31:56
    - But everything's so good.
    As in. Seth, the sauce
  • 31:56 - 31:57
    is super gamechanger.
  • 31:58 - 32:00
    Super delicious. Promise.
    No joke.
  • 32:00 - 32:02
    I'm thankful for the growth.
  • 32:02 - 32:05
    I'm just super lucky
    to be surrounded by people
  • 32:05 - 32:07
    who are very passionate
    in what they do,
  • 32:07 - 32:09
    and it's always
    another learning experience
  • 32:09 - 32:11
    everyday with the team.
  • 32:14 - 32:15
    - Don't hurt yourself.
  • 32:21 - 32:23
    - So the dish
    that we made today,
  • 32:24 - 32:26
    the idea was
    how can you put together
  • 32:26 - 32:28
two dishes that I grew up with
    that I really
  • 32:28 - 32:31
    have strong memories with
    which is a beef mechado
  • 32:32 - 32:34
and the only dish my dad
    ever taught me
  • 32:34 - 32:38
    which was Homard à l'Armoricaine
    which is the only dish
  • 32:38 - 32:40
he ever taught me how to make
    but it's absolutely delicious.
  • 32:40 - 32:44
    And I found those flavors
to be very kind of synonymous
  • 32:44 - 32:45
    so that's what I kind
    of played with.
  • 32:45 - 32:49
    So you have veal cheeks,
    I added 'Nduja.
  • 32:49 - 32:53
    And then, Homard à l'Armoricaine
    is a tomato-based stew,
  • 32:53 - 32:55
    a lobster stew
    from France as well.
  • 32:55 - 32:57
    Both of those stocks
    came together,
  • 32:57 - 32:59
    and then cooked down
    into really thick,
  • 32:59 - 33:01
    kind of like fatty sauce.
  • 33:01 - 33:01
    That's why I didn't put
    too much of it
  • 33:01 - 33:02
    'cause it's quite intense.
  • 33:03 - 33:05
    And then, I sous vided
    and poached...
  • 33:05 - 33:08
    butter poached the lobsters,
    and I really cooked down
  • 33:08 - 33:10
the veal very nice and tender.
  • 33:10 - 33:11
    And that's served
    with betel nut.
  • 33:11 - 33:13
Betel nut is what they use
    when they make nganga
  • 33:13 - 33:15
    in like Visayas and stuff,
    and they chew tobacco.
  • 33:15 - 33:17
    So that's the leave
I used to kind of deep fry.
  • 33:17 - 33:19
    So that's another Filipino element
    on the plate.
  • 33:21 - 33:22
    And yeah. So the idea
    was to kind of present
  • 33:22 - 33:23
those two cultures in one dish.
  • 33:24 - 33:27
    And then, we have soubise.
    Soubise is a French sauce
  • 33:27 - 33:30
    of caramelized onions
    that's kind of blended
  • 33:30 - 33:33
    at a high speed
    with cream and milk
  • 33:33 - 33:34
    which is really nice.
  • 33:34 - 33:37
    And then, I added
    natural ube to it;
  • 33:37 - 33:38
    there's no coloring there.
  • 33:38 - 33:40
So it's kind of like a mashed...
  • 33:40 - 33:42
    It looks like ube halaya
    but it's not,
  • 33:42 - 33:43
    it's a savory version.
  • 33:43 - 33:46
    So it's soubise mixed
    with an ube mash.
  • 33:46 - 33:48
    So those two things
    come together nicely.
  • 33:48 - 33:49
    - So what are you grateful for?
  • 33:49 - 33:51
    (laughs)
  • 33:51 - 33:53
    - Whoo!
  • 33:54 - 33:56
    - In my life, I've never
    really believed so much
  • 33:56 - 34:00
in something that I was doing,
    and that belief
  • 34:00 - 34:02
    would not be possible
    with the team
  • 34:02 - 34:04
that we've built over the years.
  • 34:04 - 34:07
    Yes, that team has grown,
    has changed,
  • 34:07 - 34:09
    the dynamics are always
    more complicated
  • 34:09 - 34:11
    the more the number
    of people that you bring
  • 34:11 - 34:13
into a team, but I really
    do think that
  • 34:13 - 34:16
    the instinct, the flexibility,
    and everything
  • 34:16 - 34:20
    that we started with
is still very much at the core
  • 34:20 - 34:21
    of what we do.
  • 34:21 - 34:23
    I really believe in kind
    of all the work
  • 34:23 - 34:24
    that we're doing.
  • 34:24 - 34:26
    I think it's fantastic.
    I think we're doing something
  • 34:26 - 34:28
    that's never been done
    in the Philippines.
  • 34:28 - 34:31
And you know, I've always hated
    when people said,
  • 34:31 - 34:33
you know, "Ah, it's good enough
    for the Philippines."
  • 34:33 - 34:36
    Like, that was always something
    I kind of nod at,
  • 34:36 - 34:38
    that pissed me off,
    and I think we're proving
  • 34:38 - 34:40
    that quote wrong in general.
  • 34:40 - 34:42
    And that's something
    that wouldn't be possible
  • 34:42 - 34:43
    with anyone...
  • 34:43 - 34:45
    everyone at this table
    and everyone that's not
  • 34:45 - 34:47
    on this table,
    that couldn't join us today.
  • 34:47 - 34:50
    So thank you very much
    for kind of believing
  • 34:50 - 34:52
in this journey with me as well.
  • 34:52 - 34:55
    I know we operate
    at a very high pace
  • 34:55 - 34:56
    and at a high speed,
    but I think it's something
  • 34:56 - 35:00
that we can all agree that,
    you know, we're very lucky
  • 35:00 - 35:03
to be put in this position as well,
    to do things
  • 35:03 - 35:04
    that we're passionate about.
  • 35:05 - 35:06
    So thank you all.
  • 35:06 - 35:07
    (cheers and applauds)
  • 35:08 - 35:09
    - Delicious.
  • 35:12 - 35:15
    - I can eat the ube, like,
    by itself.
  • 35:18 - 35:22
    - So I super love this dish
'cause I can taste the flavors
  • 35:22 - 35:25
    of Filipino and French.
  • 35:25 - 35:27
I can eat it as is.
  • 35:27 - 35:30
    First, I'm grateful
    for the kitchen team
  • 35:30 - 35:34
    for working so hard
    and preparing everything
  • 35:34 - 35:36
that's on the table right now.
  • 35:36 - 35:38
    Everything was so good.
  • 35:38 - 35:42
    I'm also grateful
    for the whole TFKI team
  • 35:42 - 35:45
    'cause everyone is so passionate
    and it's actually
  • 35:45 - 35:48
    super inspiring,
    and it pushes me
  • 35:48 - 35:50
    to become better each day.
  • 35:50 - 35:51
    - Yeah!
  • 35:53 - 35:58
    - I’ve been in the industry
    for over 10 years,
  • 35:58 - 36:01
and out of all the shoots
    I’ve been to—
  • 36:01 - 36:05
    so many shoots—
    this is the only production
  • 36:05 - 36:07
    that I’ve truly
    taken great care of.
  • 36:08 - 36:10
    (applauds)
  • 36:10 - 36:11
    (cheers)
  • 36:14 - 36:18
    So looking forward
    to more years to come.
  • 36:18 - 36:21
    (cheers and applauds)
  • 36:22 - 36:26
    - All right. So we are team dessert—
    Nica and Marts.
  • 36:27 - 36:28
    So the first one,
the one in front of you,
  • 36:28 - 36:31
    it's Vacherin Au Citron.
    Is it correct?
  • 36:31 - 36:32
    - Vacherin.
  • 36:32 - 36:33
    - Vacherin Au Citron.
  • 36:34 - 36:36
    Basically, it's like
    an ice cream cake
  • 36:36 - 36:38
    but with all lemon.
  • 36:38 - 36:41
    So it's meringue,
    it's lemon curd,
  • 36:41 - 36:44
    lemon sorbet,
    and mint and basil syrup.
  • 36:44 - 36:47
    All house-made,
    all sour but sweet.
  • 36:47 - 36:51
    And whenever I make dishes
    for people,
  • 36:51 - 36:52
    it always comes from...
  • 36:52 - 36:53
    Sorry, Seth.
  • 36:53 - 36:55
    It always comes from memory
    and experience.
  • 36:56 - 36:59
So this was the last recipe
    I developed
  • 36:59 - 37:01
with a good friend of mine
    before he passed away.
  • 37:03 - 37:05
    And things like that,
    I love serving to people
  • 37:05 - 37:06
    I really like.
  • 37:06 - 37:09
So this one's for everyone here.
I hope you guys like it.
  • 37:10 - 37:11
    - What are you grateful for?
  • 37:11 - 37:14
    - I am thankful for each
and every one of you here.
  • 37:16 - 37:18
    You guys are very patient
    with each other,
  • 37:18 - 37:22
    you always listen to,
    you know, instructions,
  • 37:22 - 37:24
    criticisms, or even affirmations
    which is great.
  • 37:24 - 37:26
    - Thank you, Chef!
  • 37:26 - 37:27
    (applauds)
  • 37:27 - 37:28
    - The centerpiece.
  • 37:29 - 37:35
    - Okay. So after
    a refreshing dessert from Chef,
  • 37:35 - 37:40
    so we want to close
    and end this wonderful
  • 37:40 - 37:43
    Thanksgiving dinner
on a warm and sweet note,
  • 37:43 - 37:47
    so that's why I chose
    a merry cheesecake stuffed
  • 37:47 - 37:48
    carrot cake.
  • 37:48 - 37:50
    So in the middle
    of our carrot cake,
  • 37:50 - 37:54
    there's a whole cheesecake.
    It's frosted with
  • 37:54 - 37:58
    a very nice and light
    cream cheese frosting.
  • 37:58 - 38:01
    Just to have it
    all come together,
  • 38:01 - 38:03
    there's a spiced
    butterscotch sauce
  • 38:03 - 38:05
that you can drizzle on top.
  • 38:05 - 38:08
    So I'm very grateful
    for the entire team
  • 38:08 - 38:12
    because you believed in me
    even if I had doubts
  • 38:12 - 38:13
    with myself.
  • 38:13 - 38:16
    And I'm just very thankful
for each and every one of you.
  • 38:16 - 38:19
    And hopefully, it's going
    to be a fruitful 2025.
  • 38:19 - 38:20
    (cheers)
  • 38:35 - 38:36
    - What I'm grateful for...
  • 38:37 - 38:45
    Someone once asked me,
    “Your family is amazing,”
  • 38:45 - 38:46
    they said.
  • 38:48 - 38:52
    My answer to that was,
    it all boils down
  • 38:52 - 38:54
    to where you came from.
  • 38:54 - 38:58
    Of course, before you built
    that family, you had work,
  • 38:58 - 39:02
    and through that work,
    you fought for your family.
  • 39:02 - 39:05
    That’s what people
    see now, right?
  • 39:06 - 39:09
    So it all goes back
    to where I came from,
  • 39:09 - 39:10
    and I’m grateful for myself.
  • 39:10 - 39:12
    Like, Hans,
    I’m grateful for myself.
  • 39:12 - 39:13
    You know why?
  • 39:13 - 39:17
    Because I arrived
an hour and a half early
  • 39:17 - 39:19
    to shoot BTS for Erwan.
  • 39:20 - 39:23
That one and a half hours—
    when the camera operator
  • 39:23 - 39:27
was late, the DOP said to me,
  • 39:27 - 39:30
    “Monn, can you handle
    this camera?”
  • 39:30 - 39:34
    And from that day on,
    I’ve been grateful for myself
  • 39:34 - 39:37
    because that’s the day I met E.
  • 39:37 - 39:40
And on that day, he asked
    if I had a passport.
  • 39:41 - 39:46
That same day, I locked in
    my flight to Taiwan
  • 39:46 - 39:50
for my first job with Erwan.
  • 39:51 - 39:58
Because I showed up so early,
    I got that opportunity,
  • 39:58 - 40:00
    and that’s the reason
    I’m here today.
  • 40:00 - 40:04
So the lesson for everyone is,
    whatever opportunity
  • 40:04 - 40:07
    comes your way, be grateful.
  • 40:07 - 40:10
    And I’m grateful
    because we’ve grown so much.
  • 40:10 - 40:13
When I walk into the office,
    I’m greeted warmly—
  • 40:13 - 40:15
    everyone is welcoming.
  • 40:15 - 40:20
There’s no one in a bad mood,
    no one complaining
  • 40:20 - 40:23
    about their life,
    because we’re all putting out
  • 40:23 - 40:25
    the same positive energy
    for each other.
  • 40:26 - 40:29
    And I’m grateful because
we all lift each other up—
  • 40:29 - 40:32
    not drag each other down,
    but help each other rise.
  • 40:32 - 40:37
    Thank you, Erwan,
    because wherever this attitude
  • 40:37 - 40:43
    comes from, for sure,
    it’s because of our boss.
  • 40:43 - 40:46
    If he were a jerk,
    we’d all be jerks, right?
  • 40:46 - 40:50
    For sure. E, thank you.
    Love you, man. Thank you.
  • 40:50 - 40:53
    And we’re going to grow
    even more, for sure.
  • 40:53 - 40:54
Thank you, thank you, thank you.
  • 40:54 - 40:56
    (applauds)
  • 40:57 - 41:00
    - You gave me the chance
    to fulfill my dreams.
  • 41:01 - 41:01
    Oh, sorry.
  • 41:01 - 41:03
    (laughs)
