[temp for subs] The Best Kare-Kare in Manila

  • Not Synced
    - When it comes to stews,
    Filipinos are the ones
  • Not Synced
    who are good at it.
    - Why is it noisy there?
  • Not Synced
    - [Martin] I'm doing my spiels
    for my outdoor shoot.
  • Not Synced
    - Me too.
  • Not Synced
Why are you doing it here?
    Go to some other place.
  • Not Synced
    - [Martin] Who came here first?
  • Not Synced
    - I don't have a rebuttal
    for that.
  • Not Synced
    Let's leave here.
  • Not Synced
    - Just kidding.
    We love each other.
  • Not Synced
    (grunts)
  • Not Synced
    There.
  • Not Synced
    (grunts)
  • Not Synced
    Go ahead.
  • Not Synced
    You don't have anything
    beside you. Just continue.
  • Not Synced
    You got anything for me?
  • Not Synced
    There's still some stuff
    in this.
  • Not Synced
    So today we're going
    around the metro
  • Not Synced
    to find out which kare-kare
    is the best.
  • Not Synced
    In my opinion, anyway.
  • Not Synced
    All right. So today
    we're going around the metro.
  • Not Synced
    Maybe we'll go
    to three establishments
  • Not Synced
    that serve kare-kare,
  • Not Synced
    but then different personalities.
  • Not Synced
    Like the first one
    we're going to go to
  • Not Synced
    would be an establishment
    that made it as far
  • Not Synced
    as London.
  • Not Synced
    Imagine, our stew
    has become international.
  • Not Synced
    The second one
    is homegrown.
  • Not Synced
    It's a small home business.
  • Not Synced
    The last one, they've been
around for a very long time.
  • Not Synced
    So yeah. I'm very excited.
  • Not Synced
    So we're going
    to Romulo Cafe.
  • Not Synced
Now it has three branches here
    in the Philippines—
  • Not Synced
    QC, Alabang, and I think
    in Makati.
  • Not Synced
    But did you know
    that they also have
  • Not Synced
    a branch
    in Kensington High Street
  • Not Synced
    over at London?
  • Not Synced
    Classy!
  • Not Synced
    So Romulo Cafe actually
is run by third generation already.
  • Not Synced
    If I had to describe
    kare-kare to you,
  • Not Synced
    I'd say that
it's a rich and creamy stew
  • Not Synced
    that has a very prominent
    peanut flavor
  • Not Synced
    and that strong broth
    that we used
  • Not Synced
    to tenderize,
    our ox tails, our tripe,
  • Not Synced
    and whatever beef part
    you put it into.
  • Not Synced
    And of course,
    there's the steamed vegetables
  • Not Synced
    and bagoong,
    'cause that really compliments
  • Not Synced
    the savory
    and peanuty flavor.
  • Not Synced
    And usually, kare-kare
    is eaten with rice
  • Not Synced
    since it's already packed
    with meat, veggies,
  • Not Synced
    and a thick soup.
  • Not Synced
    As you can see,
    it's not as smooth
  • Not Synced
    as your usual kare-kare,
    and that's
  • Not Synced
    because they actually grind
    their own rice
  • Not Synced
    and that's what they use
    as thickeners,
  • Not Synced
    which is what we use
    traditionally anyway.
  • Not Synced
    And so at first,
I saw the prices on the menu,
  • Not Synced
    you'd think it's a bit much,
    but then
  • Not Synced
    when they served the food,
    it was packed with tripe
  • Not Synced
    and ox tail.
  • Not Synced
This is what a family serving
    really means.
  • Not Synced
    Standard beans, cabbage,
    and eggplant.
  • Not Synced
    Wow.
  • Not Synced
    This is their bagoong.
  • Not Synced
    So let's taste it first
    without bagoong.
  • Not Synced
    That's usually what I do
    whenever I eat kare-kare outside.
  • Not Synced
    To be honest,
the fact that it's not smooth
  • Not Synced
    actually reminds me
    of the more traditional kare-kare.
  • Not Synced
    Well, obviously my preference
    is a smoother sauce
  • Not Synced
    or smoother soup.
  • Not Synced
    Some people would really
    love this.
  • Not Synced
I think it's time to move on
    to another place
  • Not Synced
    that serves an heirloom
    kare-kare recipe.
  • Not Synced
    This business was started
    by two couples
  • Not Synced
    during the pandemic.
  • Not Synced
    And they are called
    Iya's Kare Kare.
  • Not Synced
    Oh my, my back.
  • Not Synced
    We're on our way
    to Iya's Kare-Kare.
  • Not Synced
    They are an online business,
    but they're nice enough
  • Not Synced
    to let me in.
  • Not Synced
    - [Iya] It was April 2020,
    my husband and I
  • Not Synced
    just kind of craved kare-kare.
  • Not Synced
    And then at that time,
    I asked my grandmother
  • Not Synced
to teach me how to cook it.
  • Not Synced
    - [Martin] So it's really
    an heirloom recipe.
  • Not Synced
    - Yes.
  • Not Synced
    Then, I cooked one
    and she said
  • Not Synced
    that it's good.
  • Not Synced
    I even posted in Facebook
    without having any idea.
  • Not Synced
    My caption was like,
"It's my first time cooking it
  • Not Synced
    and it tasted good."
  • Not Synced
    So I posted it.
  • Not Synced
    We were living then
    at a condo.
  • Not Synced
    At that time,
    marketplace is common
  • Not Synced
    in condos.
  • Not Synced
    - [Martin] Oh, yeah.
    The Viber groups.
  • Not Synced
    - [Iya] Exactly, right?
  • Not Synced
    So I offered it
    without thinking
  • Not Synced
    of anything.
  • Not Synced
    I was surprised
    that someone ordered.
  • Not Synced
    Never in my wildest dream
    did I imagine
  • Not Synced
    that this would evolve
    into something
  • Not Synced
    like up until now,
    two years have passed...
  • Not Synced
    It's still small,
    but now there's more people
  • Not Synced
    who knows this.
  • Not Synced
    - We're not saying
    that we're already there.
  • Not Synced
    But hopefully one day
    we can reach it.
  • Not Synced
    - Actually, this guy
    over here,
  • Not Synced
    he's one main critic
    when it comes to kare-kare.
  • Not Synced
    That's automatic.
  • Not Synced
When he says that it's good,
    it's really good.
  • Not Synced
For me, this is the perfect
    tenderization of meat,
  • Not Synced
when it still keeps its form.
  • Not Synced
    - [Iya] Chef, bagoong.
  • Not Synced
    - They also make the bagoong.
  • Not Synced
    How many times
    do you have to make
  • Not Synced
    your bagoong,
since you make it by batch?
  • Not Synced
    - [Iya] Maybe I do it
    once a week.
  • Not Synced
    Honest feedback, okay?
  • Not Synced
    - It's so worth it.
  • Not Synced
    (laughs)
  • Not Synced
    It's really good, man.
  • Not Synced
    That's without bagoong yet.
  • Not Synced
    - [Iya] Thank you!
  • Not Synced
    That's how I usually eat.
  • Not Synced
    - You know what,
    I don't believe
  • Not Synced
    that you've just started
    cooking in 2019.
  • Not Synced
    - Oh, you!
  • Not Synced
    (laughs)
  • Not Synced
    - But it's really true.
  • Not Synced
    I won't leave anything
    for you, Julius.
  • Not Synced
    I'm sorry.
  • Not Synced
    It's so good.
  • Not Synced
    So you guys can order
    from Iya's Kare-Kare.
  • Not Synced
    We'll just put that
    in the description somewhere.
  • Not Synced
    It would be weird
    if we mention
  • Not Synced
    any Facebook or number.
  • Not Synced
    So we'll do it later.
  • Not Synced
So I'm not going to wait
    until we get back
  • Not Synced
    to the office.
  • Not Synced
    This is really one
    of the best kare-kare
  • Not Synced
    that I've had.
  • Not Synced
    Trust. Trust.
  • Not Synced
Even though this is not bread,
    trust me.
  • Not Synced
So we are here at our last stop.
  • Not Synced
    This space is called
    Cafe Juanita.
  • Not Synced
    It's full of trinkets.
    The place is very interesting.
  • Not Synced
    And you know,
    this place is actually described
  • Not Synced
    by Time Magazine
as a place where the food
  • Not Synced
is as close to home cooking
    as it can get.
  • Not Synced
    And also, another thing,
    it's proudly Filipino,
  • Not Synced
    naturally home cooked,
    but made contemporary.
  • Not Synced
    I'm very excited
    to try the kare-kare,
  • Not Synced
    especially since it was mentioned
    to me that they have
  • Not Synced
the main focus on the trinity,
    where I also feel like
  • Not Synced
it should also be the main focus
    of all hospitality business
  • Not Synced
    which is service, food,
    and the ambiance.
  • Not Synced
    Wow, it's so soft.
  • Not Synced
    It's so tender.
  • Not Synced
    Of course, we have
    different favorites,
  • Not Synced
    but of course,
    it's perfect when there's
  • Not Synced
    a balance of vegetables,
    ox tail, tripe. Right?
  • Not Synced
    And of course, this bagoong.
  • Not Synced
    And what's great
    with their bagoong here
  • Not Synced
    is that, like the others
    we've went to today,
  • Not Synced
    they actually process it
    themselves.
  • Not Synced
    They cook it here,
    they get the raw materials,
  • Not Synced
    and have their own formulation
or like own recipe for it.
  • Not Synced
    Let's taste it as is.
  • Not Synced
This is how tender it is.
  • Not Synced
    Now this is what
    you call fork tender.
  • Not Synced
    It didn't separate
    into pieces,
  • Not Synced
    its mass or shape
    is still intact.
  • Not Synced
    But you can use
    the back of a spoon
  • Not Synced
    or even just your fork.
  • Not Synced
    It's so solid.
  • Not Synced
    It's so delicious.
  • Not Synced
    This is the food
    that you can bring
  • Not Synced
to any potluck and you're going
    to be the winner.
  • Not Synced
The ox tail is so soft.
  • Not Synced
    The flavor of the sauce
    is delicious,
  • Not Synced
    there's a bit of sweetness
    and savoriness to it.
  • Not Synced
    Its seasoning gets completed
    when you eat it
  • Not Synced
    with their bagoong.
  • Not Synced
    I won't share this,
    this is all mine.
  • Not Synced
    So we've gone through three
    of the best kare-kares here
  • Not Synced
    in Metro Manila
    according to our sources.
  • Not Synced
    And I'm about to give
    my verdict.
  • Not Synced
    But before that...
  • Not Synced
    Don't get mad at me,
    Erwan.
  • Not Synced
    Julius and I
    are really just like this.
  • Not Synced
    Iya's Kare-Kare
    is the best one.
  • Not Synced
    Kare-kare will always be
    one of our go-to
  • Not Synced
    Filipino dishes,
and I can definitely see why.
  • Not Synced
    Savory, comforting,
    loaded with meat
  • Not Synced
    and vegetables.
  • Not Synced
    And best of all,
    it will always remind us
  • Not Synced
    of our mom's
    or our grandmother's cooking.
  • Not Synced
    Iya's Kare-Kare wins
    this one for me,
  • Not Synced
    but do give the others
    a try as well
  • Not Synced
    and let us know
    whose kare-kare
  • Not Synced
    is the best for you.
